Crab is a popular seafood delicacy across coastal regions of India. From Kerala's spicy coconut crab curry to Bengal's mustard crab preparations and Goa's tangy masalas, each region adds its unique touch. For the Crab:

  • Fresh crabs – 4 medium-sized (cleaned and cut into halves)
  • Turmeric powder – ½ tsp
  • Salt – to taste

For the Masala:

  • Onion – 2 large, finely chopped
  • Tomatoes – 2 medium, chopped
  • Green chilies – 2, slit
  • Ginger-garlic paste – 2 tbsp
  • Grated coconut – ½ cup (optional for a thicker gravy)
  • Coconut milk – ½ cup (optional, for Kerala-style)
  • Curry leaves – 10-12
  • Coriander powder – 2 tsp
  • Red chili powder – 1½ tsp (adjust to taste)
  • Garam masala – 1 tsp
  • Black pepper powder – ½ tsp
  • Mustard seeds – 1 tsp
  • Oil – 2 tbsp (preferably coconut oil)
  • Water – as required

1. Prepare the Crabs:

  • Clean the crabs thoroughly. Remove the shell, legs if desired, and internal organs.
  • Rinse well and set aside. Marinate with a pinch of salt and turmeric.

2. Make the Base Masala:

  • Heat oil in a large pan or clay pot (manchatti for authentic taste).
  • Add mustard seeds and let them splutter.
  • Toss in curry leaves and green chilies.
  • Add chopped onions and sauté until golden brown.
  • Stir in ginger-garlic paste and cook until the raw smell disappears.

3. Add the Spices and Tomato:

  • Add coriander powder, red chili powder, and pepper powder. Sauté for a minute.
  • Add chopped tomatoes and cook until soft and oil separates.
  • If using grated coconut, roast it lightly and blend into a paste. Add at this stage for thicker gravy.

4. Cook the Crab:

  • Add the marinated crabs into the masala.
  • Mix well to coat the crabs in the spices.
  • Pour water just enough to make a curry (or add coconut milk for a creamy version).
  • Cover and cook for 10-12 minutes on medium heat until the crab meat turns opaque and flavorful.

5. Final Touch:

  • Sprinkle garam masala and adjust salt.
  • Simmer for another 2-3 minutes.
