Ingredients:
- 500 grams of chicken (preferably with bone, cut into medium-sized pieces)
- 2 tablespoons of ginger-garlic paste
- 1 teaspoon of red chili powder (adjust to taste)
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 2 tablespoons lemon juice or curd
- Salt to taste
- 2 tablespoons rice flour or corn flour (for extra crispiness)
- Curry leaves (optional, for extra flavor)
- Oil for deep frying
Marination:
-
Clean the Chicken:
Wash the chicken pieces thoroughly and drain the water completely. -
Prepare the Marinade:
In a bowl, mix ginger-garlic paste, chili powder, turmeric, coriander powder, garam masala, lemon juice (or curd), salt, and rice flour/corn flour. -
Coat the Chicken:
Add the chicken pieces to the marinade and mix well until every piece is coated evenly.
Let it marinate for at least 1 hour. For better flavor, refrigerate for 4–5 hours or overnight.
Frying the Chicken:
-
Heat Oil:
Pour oil into a deep frying pan or kadai and heat it on medium flame. -
Fry the Chicken:
Once the oil is hot, gently drop the marinated chicken pieces into the oil. Don’t overcrowd the pan—fry in batches if needed. -
Cook Until Golden Brown:
Fry the chicken pieces for 8–10 minutes or until they turn golden brown and crispy.
Add curry leaves in the last 2 minutes for added aroma and taste. -
Drain Excess Oil:
Remove the chicken and place it on paper towels to absorb excess oil.
Serving Suggestions:
Serve the hot and crispy chicken fry with onion rings, lemon wedges, and mint chutney or ketchup. It can be enjoyed as a snack, side dish, or even as a main course with rice or roti.

- Using rice flour or corn flour helps make the chicken extra crispy.
