Crispy corn is a popular Indian snack known for its spicy, tangy, and crunchy taste. Ingredients:

For Frying:

  • 2 cups sweet corn kernels (boiled)
  • 3 tablespoons rice flour
  • 2 tablespoons corn flour
  • Salt to taste
  • 1/2 teaspoon black pepper powder
  • Oil for deep frying

For Tossing:

  • 1 tablespoon oil
  • 1 small onion (finely chopped)
  • 1 small capsicum (finely chopped, optional)
  • 1 green chili (finely chopped)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon chaat masala
  • Juice of half a lemon
  • Fresh coriander leaves (chopped) for garnish

Instructions:

Step 1: Boil the Corn

  • Boil sweet corn in water with a pinch of salt for 5–7 minutes or until soft. Drain the water and let the corn cool down completely.

Step 2: Coat the Corn

  • In a large mixing bowl, add the cooled corn kernels.
  • Sprinkle rice flour, corn flour, salt, and pepper. Mix well to coat each kernel evenly. If needed, sprinkle a few drops of water so the flours stick better to the corn.

Step 3: Deep Fry the Corn

  • Heat oil in a deep pan or kadai on medium flame.
  • Drop the coated corn kernels gently into the oil in small batches. Do not overcrowd the pan.
  • Fry until the corn becomes golden brown and crispy. Be cautious as corn may pop a bit.
  • Remove and drain on a paper towel to absorb excess oil.

Step 4: Prepare the Toss

  • In a separate pan, heat 1 tablespoon of oil.
  • Add chopped onion, green chili, and capsicum. Sauté for a minute.
  • Add fried corn to this and toss well.
  • Sprinkle red chili powder, chaat masala, and lemon juice. Mix everything thoroughly.

Step 5: Garnish and Serve

  • Garnish with freshly chopped coriander leaves.
