Ingredients:
- 250 grams of fresh green beans (also called French beans)
- 1 tablespoon oil (vegetable or coconut oil works well)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 cloves garlic (finely chopped)
- 1 small onion (chopped)
- 1–2 green chilies (slit or chopped, adjust to taste)
- A few curry leaves (optional, for extra flavor)
- ¼ teaspoon turmeric powder
- ½ teaspoon red chili powder
- Salt to taste
- A pinch of asafoetida (hing) – optional
- Grated coconut or a squeeze of lemon juice for garnish (optional)
Instructions:
1. Prepare the Green Beans:
- Wash the green beans thoroughly under running water.
- Trim off the ends and chop them into small pieces (about 1-inch long).
2. Blanch (Optional but Recommended):
- To make cooking quicker and retain color, you can blanch the beans.
- Boil water in a pan, add the beans, and cook for 2-3 minutes.
- Drain and immediately rinse with cold water to stop cooking.
3. Tempering:
- Heat oil in a pan or skillet on medium heat.
- Add mustard seeds and let them pop.
- Add cumin seeds, asafoetida, and curry leaves if using.
- Add chopped garlic and sauté for a few seconds until golden.
- Add chopped onions and green chilies. Fry until onions turn soft.
4. Cook the Beans:
- Add the chopped green beans to the pan.
- Sprinkle turmeric, chili powder, and salt.
- Mix well and cook uncovered on medium heat for 6–8 minutes.
- Stir occasionally to ensure even cooking without burning.
- You can sprinkle a few spoons of water if the beans are too dry.
5. Finishing Touch:
- Once the beans are cooked but still slightly crunchy, turn off the heat.
- Garnish with freshly grated coconut or squeeze in some lemon juice for extra zing.
Serving Suggestions:
- Serve hot with steamed rice, dal, or chapati.
- Can also be packed as a side dish in lunchboxes.
Tips:
- Avoid overcooking the beans to keep the texture crisp.
- You can add crushed peanuts or sesame seeds for added crunch.
- For a South Indian version, temper with urad dal and finish with coconut.
