How to Make Mixed Vegetable: A Healthy & Flavorful Dish

Mixed vegetable is a wholesome, colorful, and nutritious dish that brings together a variety of seasonal vegetables cooked with aromatic spices. It's a popular choice in Indian kitchens and can be served with roti, rice, or paratha. Ingredients

Vegetables (chopped or diced):

  • 1 cup cauliflower florets
  • 1 carrot
  • 1 potato
  • 1/2 cup green peas
  • 1/2 cup green beans
  • 1 capsicum (bell pepper)
  • 1 tomato (chopped)
  • 1 onion (finely chopped)

Spices and herbs:

  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil or ghee
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Vegetables

Wash and chop all the vegetables into bite-sized pieces. Try to keep them evenly sized for uniform cooking.

Step 2: Sauté the Base

  • Heat oil in a pan.
  • Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add chopped tomatoes and cook until they turn soft and pulpy.

Step 3: Add Spices

  • Add turmeric, red chili powder, coriander powder, and salt.
  • Stir well and cook the masala for 2 minutes until the oil separates.

Step 4: Add Vegetables

  • Add the harder vegetables first (potatoes, carrots, beans) and stir-fry for 3–4 minutes.
  • Then add cauliflower, peas, and capsicum.
  • Mix well with the masala so the vegetables are nicely coated.

Step 5: Cook Until Tender

  • Add about 1/4 cup water.
  • Cover the pan with a lid and cook on low-medium heat for 10–15 minutes.
  • Stir occasionally to avoid burning and check if the vegetables are cooked and tender.

Step 6: Finish and Garnish

  • Once the vegetables are soft and the water is absorbed, add garam masala.
  • Mix and cook for another 2 minutes.
  • Garnish with fresh coriander leaves.

Serving Suggestions

  • Serve hot with chapati, paratha, or plain rice.
  • You can also use it as a stuffing for wraps or sandwiches.

Tips

  • You can customize with seasonal vegetables like zucchini, baby corn, or mushrooms.
