How to Make Mixed Vegetable: A Healthy & Flavorful Dish
Mixed vegetable is a wholesome, colorful, and nutritious dish that brings together a variety of seasonal vegetables cooked with aromatic spices. Ingredients
Vegetables (chopped or diced):
- 1 cup cauliflower florets
- 1 carrot
- 1 potato
- 1/2 cup green peas

- 1 capsicum (bell pepper)
- 1 tomato (chopped)
- 1 onion (finely chopped)
Spices and herbs:
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp oil or ghee
- Fresh coriander leaves for garnish
Instructions
Step 1: Prepare the Vegetables
Wash and chop all the vegetables into bite-sized pieces. Try to keep them evenly sized for uniform cooking.
Step 2: Sauté the Base
- Heat oil in a pan.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add chopped tomatoes and cook until they turn soft and pulpy.
Step 3: Add Spices
- Add turmeric, red chili powder, coriander powder, and salt.
- Stir well and cook the masala for 2 minutes until the oil separates.
Step 4: Add Vegetables
- Add the harder vegetables first (potatoes, carrots, beans) and stir-fry for 3–4 minutes.
- Then add cauliflower, peas, and capsicum.
- Mix well with the masala so the vegetables are nicely coated.
Step 5: Cook Until Tender
- Add about 1/4 cup water.
- Cover the pan with a lid and cook on low-medium heat for 10–15 minutes.
- Stir occasionally to avoid burning and check if the vegetables are cooked and tender.
Step 6: Finish and Garnish
- Once the vegetables are soft and the water is absorbed, add garam masala.
- Mix and cook for another 2 minutes.
- Garnish with fresh coriander leaves.
