How to Make Soft and Fluffy Idli – A Step-by-Step Guide

Idli is a traditional South Indian steamed rice cake, loved for its soft texture and health benefits. It’s light, easily digestible, and perfect for breakfast or as a light meal. Here’s a simple guide to help you make perfect idlis at home.


Ingredients:

  • 2 cups parboiled rice (idli rice)
  • 1 cup urad dal (split black gram without skin)
  • 1 teaspoon fenugreek seeds (optional)
  • Salt to taste
  • Water as needed
  • Oil or ghee for greasing idli molds

Instructions:

Step 1: Soak the Ingredients

  1. Wash the rice thoroughly and soak it in water for at least 4–6 hours.
  2. Wash the urad dal and fenugreek seeds (if using), and soak them together in a separate bowl for 4–6 hours.

Step 2: Grind the Batter

  1. Drain the soaked urad dal and grind it in a wet grinder or blender with a little water until it becomes light and fluffy.
  2. Drain the soaked rice and grind it separately to a slightly coarse paste using minimal water.
  3. Mix both batters in a large bowl. Add salt and stir well.
  4. The batter should have a thick but pourable consistency.

Step 3: Ferment the Batter

  1. Cover the bowl with a lid or cloth.
  2. Leave it in a warm place for 8–12 hours or overnight, until the batter rises and becomes airy. It should double in volume.

Step 4: Prepare the Idlis

  1. Grease idli molds lightly with oil or ghee.
  2. Pour the fermented batter into the molds.
  3. Steam the idlis in an idli steamer or pressure cooker (without whistle) for about 10–12 minutes on medium heat.

Step 5: Check and Serve

  1. Insert a toothpick or knife into an idli; if it comes out clean, the idlis are done.
  2. Let them rest for 2 minutes, then remove gently with a spoon.

Serving Suggestions:

Serve hot idlis with:

  • Coconut chutney
  • Sambar
  • Tomato or mint chutney
  • Ghee and podi (spiced lentil powder)

Tips for Soft Idlis:

  • Use fresh ingredients and good quality urad dal.
  • Grind urad dal until very fluffy and light.
  • Maintain a warm environment for fermentation.
  • Do not overmix after fermentation.
